FRENCH MACAROONS

FRENCH MACAROONS... DELISH! SOFT, CHEWY, AND OH SO SWEET. 







Want to try these are home?  Try out this recipe and fill them with jam or frosting or chocolate ganache.  YUM!

INGREDIENTS:
1 lb. 7 oz. granulated sugar
1/4 cup egg whites
2 lb. 4 oz. almond paste
2 Tbsp. lemon zest, finely grated

1 cup egg whites

1. Using a paddle/mixer, combine first 4 ingredients.  Blend together for 4-5 minutes.
If you'd like to add color, do so now with food color.
2. When mixture become smooth, gradually add in 1 cup egg whites. 
Scrape the sides of the bowl to make sure there are no lumps. 
--Add egg whites slowly to avoid lumps!
3. Mixture should drop slowly from a spoon if it is the right consistency.
-if it is too dry, add more egg whites
4. Pipe small rounds about 2" in diameter onto parchement paper or a silpat.
5. Sprinkle with granulated sugar before baking.

Bake at 350* F for 15-18 minutes. 
Macaroons should still be chewy in the center and lightly golden in color.

Fill with ganache, jam, frosting, etc.  You can also dip them in chocolate.

Store in the freezer to keep fresh.
